Sweet Potato and Beetroot Soup Recipe

A thick and tasty beetroot soup recipe

This is a deliciously thick tasty soup that can be tweaked to your liking. Add garlic if you are a garlic lover and use ordinary potatoes if you are more partial to them.


4 large beetroots, cubed
1 onion, chopped
1.25 liters vegetable stock
3 tablespoons sunflower oil
1 large sweet potato, cubed
2 tablespoons sherry vinegar
2 teaspoons cumin seeds
Fresh coriander

Recipe Instructions

Make the soup.
Heat the oil in a large saucepan and sweat the onions for 5 minutes until they are tender.  Add the cumin seeds and stir together for 1 minute to infuse the flavor.  Add the beetroot and sweet potato and stir all the ingredients together.  Pour in the stock and bring the mixture to a simmer.  Simmer for 15 – 20 minutes until the beetroot is soft.

Blend the soup.
Remove the soup from the heat and blend all the ingredients together with a hand held blender.  Return to the heat and add the sherry vinegar and the coriander, stirring together while heating the soup to serving temperature.
