Spiced Beetroot and Carrots Recipe Recipe

A sweet beetroot side dish

This is a sweet side dish recipe that combines the earthiness of the beetroot with the sweetness of the carrots.


1lb beetroot, peeled, cooked and sliced
2 tablespoons fresh ginger, grated
1lb carrots, peeled and sliced
½ cup orange juice
½ cup brown sugar
¼ cup cider vinegar
½ teaspoon ground cinnamon
½ teaspoon ground mace
Grated zest of 1 orange

Recipe Instructions

Cook the carrots.
Boil the carrots in lightly salted water for 5 minutes until tender.  Remove from the stove and drain.

Make the sauce.
In a saucepan over a medium heat, put in the ginger, sugar, orange juice, vinegar and orange zest.  Bring the mixture to a simmer and cook until the sauce has thickened.

Finish the dish.
Place the cooked beetroot and carrots into the sauce and let it simmer for 5 minutes.

Serve immediately.
