A deliciously different and healthier take on the traditional chocolate cake but just as tasty.
Ingredients
250g cooked beetroot, grated
300g brown sugar
125g melted butter
3 large eggs
225g flour, sifted
1 teaspoon baking powder, sifted
50g cocoa powder, sifted
75 melted dark chocolate
Recipe Instructions
Preheat the oven to 160C.
Make the cake mixture.
Put the butter, sugar and eggs in a mixer and beat together well. Mix in the melted chocolate and fold in the dry ingredients. Fold in the beetroot at the end.
Bake the cake.
Grease a 9 inch cake tin and pour in the cake mixture. Place the baking tin in the oven and bake for 45 minutes. Check if it is ready with a skewer, if the skewer comes out clean it is ready.
Ice the cake.
Melt a block of chocolate and use this to ice the cake.
I just made the beetroot and chocolate cake. It looks yummy to eat. I did find that I needed to add an extra 10 minutes to the time stated, so it took 50 mins to cook, and looks well risen. I didn’t use a mixer, but used a large mixing bowl and a wooden spoon to mix the ingredients together.
