Polish Beetroot Recipe

A hearty beetroot side dish recipe
Yield: 4    Preparation Time: 10 mins    Cooking Time: 10 mins
A classical Polish beetroot and horseradish dish that is perfect to serve hot with meat or fish.


4 beetroots, cooked, peeled and shredded
1 small onion, finely chopped
120ml plain yogurt
3 tablespoons fresh horseradish, grated
1 tablespoon butter
2 tablespoons sugar
Salt and pepper
2 tablespoons fresh parsley, chopped

Recipe Instructions

Cook the onion.
Heat the butter in a saucepan and sauté the onion for 5 minutes over a gently heat turning it from time to time.

Make the salad.
Add the yogurt to the pan and bring the heat up to boiling point.  Add the beetroot, horseradish and sugar and cook for another 2 – 3 minutes.

Season to taste with salt and pepper and garnish with the parsley.
