Herring and Beetroot Salad Recipe

Beetroot salad with herring recipe

This is a classic German recipe and is perfect as a light lunch on a warm summer day.

Ingredients

1 can pickled beets, drained (reserve the juice)
1 jar herring in cream sauce with onions
1 can sliced potatoes, drained
1 dill pickle, finely chopped
1 granny smith apple, peeled

Recipe Instructions

Prepare the ingredients:
Dice the beets, the potatoes, the herring and the apple.

Make the salad.
Mix together all the ingredients in a salad bowl and add 2 tablespoons of the beet juice.  Toss well.  Place in the refrigerator to chill for at least one day before serving.
