450g raw beetroot, peeled and finely grated
55g sunflower seeds, toasted
2 tablespoons fresh parsley, chopped
Juice and zest of 1 orange
Salt and pepper
Make the salad.
Mix together all the ingredients except the sunflower seeds and season well. Set aside and let it stand for 20 minutes.
Finish off the salad.
Just before serving, stir in the toasted sunflower seeds.
