Cabbage and Beetroot Soup Recipe

An easy-to-prepare beetroot soup recipe

A soup that is incredibly easy and quick to make, a super idea for a cold weeknight meal.

Ingredients

3 beetroots, peeled and grated
1 small cabbage, finely shredded
960ml beef stock
A pinch of Caraway Seeds
Salt and black pepper
Sour cream to serve

Recipe Instructions

Make the soup.
In a large saucepan, bring the stock to the boil and add the cabbage, beetroot, caraway seeds, salt and pepper and stir the ingredients together well.  Reduce the heat to medium, partially cover the saucepan and cook the soup for 20 minutes stirring occasionally.

Serve the soup.
Serve the soup hot with a spoonful of sour cream on top.
