Beetroot Soup Recipe

A delicious Russian beetroot soup recipe

A Russian recipe for beetroot soup. If made with vegetable stock this soup is suitable for vegetarians.

Ingredients

225g cooked beetroot, peeled and cut into small strips
350g potatoes, peeled and diced
350g white cabbage, shredded
1 large onion, peeled and finely chopped
2 ½ pints chicken or vegetable stock
1 tablespoon vinegar
1 teaspoon caraway seeds
Salt and freshly ground pepper
Sour cream

Recipe Instructions

Cook the soup.
Bring the stock, vinegar and beetroot to the boil in a large saucepan.  Reduce the heat and let it simmer for 20 – 30 minutes.  Add the cabbage, potatoes, onion and caraway seeds and simmer for another 20 – 30 minutes.

Serve.
Check the seasoning and serve with a dollop of sour cream on top.
