Beetroot Salad with Yoghurt Recipe

A delicious beetroot side dish recipe

A lovely beetroot and yoghurt recipe to serve as a side dish accompaniment to any meal.

Ingredients

6 baby beetroots, cooked
1 teaspoon sugar
1 cup yogurt
Salt and cayenne pepper
1 tablespoon snipped fresh chives

Recipe Instructions

Prepare the beetroot.
Slice the beetroot into slices about 3cm wide and place them on a serving plate.  Cover the plate and place it in the refrigerator to chill for 30 minutes.

Make the dressing.
Place the yoghurt into a bowl and add the sugar and seasoning and place in the refrigerator to chill for 30 minutes.

Make the salad.
Pour the yoghurt dressing over the arranged beetroot slices and sprinkle over the snipped chives.  Serve while still chilled.
