Beetroot, Grapefruit and Avocado Salad Recipe

Quick and easy-to-make beetroot salad

This salad is so easy to prepare and versatile that it can be eaten as a starter before any type of main meal.

Ingredients

180g fresh cooked beetroot, diced
1 large ripe avocado
1 pink grapefruit
120g mixed salad leaves
Chives
For the lemon dressing;
1 lemon, grated zest and juice
3 tablespoons olive oil
1 teaspoon icing sugar
Salt and freshly ground black pepper

Recipe Instructions

Prepare the fruit.
Remove the grapefruit skin and pith and cut out the segments.  Cut each segment in half and place them on a plate.  Peel the avocado and cut it into large pieces.

Make the dressing.
Whisk all the dressing ingredients together until you get a smooth and creamy consistency.

Make the salad.
Arrange the salad leaves on individual plates and top with equal amounts of beetroot, grapefruit and avocado.  Drizzle over the salad dressing and sprinkle with chives.
