Beetroot Dip Recipe

A basic beetroot dip recipe that can be spicy or sweet

This is a perfect dip to serve with crudités. You can adjust the flavors to taste – add cayenne for a spicier dip or honey for a sweeter dip – the choice is yours.

Ingredients

1 cup raw beetroot, roughly chopped
1 tomato, roughly chopped
¼ cup red onion, roughly chopped
1 clove garlic
¼ cup olive oil
¼ cup sunflower seeds
1 tablespoon fresh parsley, roughly chopped
1 tablespoon apple cider vinegar
1 teaspoon brown mustard
½ teaspoon Himalayan salt
2 heaped teaspoons carob powder
1 teaspoon cumin powder
Juice of ½ lemon
Freshly ground black pepper, to taste

Recipe Instructions

Blend the ingredients.
Put all the ingredients into a food processor and blend until you achieve a smooth, creamy consistency.

Serve.
Serve with vegetable crudités.
