Beetroot and Mozzarella Salad Recipe

A colorful beetroot salad recipe

This salad is colorful and tasty, with crisp slices of beetroot and soft mozzarella cheese it makes a perfect starter or accompaniment to any main meal.

Ingredients

500g beetroot, cut into quarters
1 whole mozzarella, cut into 1cm slices
1 small packet salad leaves
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
1 pinch sea salt
1 sprinkle ground black pepper

Recipe Instructions

Make the salad base.
Make a base for the salad by sprinkling a handful of salad leaves onto a serving platter.  Place a couple of slices of the mozzarella on top of the salad leaves, then add a few pieces of the beetroot over the mozzarella.  Sprinkle over some more of the salad leaves then add a drizzle over 1 teaspoon of the balsamic vinegar and 1 teaspoon of the olive oil.  Season with the sea salt and the ground black pepper.

Continue with the layering.
Add another layer of beetroot, a layer of mozzarella and top this with more salad leaves and drizzle over the balsamic vinegar and olive oil.  Build up the layers ending off with a layer of beetroot and drizzle over the remaining balsamic vinegar and olive oil.  Finally season with salt and pepper and sprinkle over a few salad leaves.
