Beetroot and Cheese Pie Recipe

A good salad accompaniment
Yield: 6    Preparation Time: 10 mins    Cooking Time: 40 mins
This is a delicious vegetarian dish that can be eaten hot with mash or boiled potato, or cold with salad.

Ingredients

1 ½ lb of beetroot
1 onion
½ lb mature cheddar cheese
3 tablespoons mayonnaise
Salt and pepper to taste

Recipe Instructions

Prepare the vegetables.
Peel the beetroot and grate it.  Grate the cheese and peel and chop the onion.

Make the filling.
Mix all the vegetables together and add the mayonnaise.  Place the filling in a whole meal pastry case with a lid.

Bake the pie.
Place the pie on a baking tray and bake for 40 minutes in a medium oven.
