Baltic Beetroot Relish Recipe

A German beetroot relish recipe

A traditional German recipe for beetroot mixed with cabbage, sugar and horseradish which is stored in a jar and covered with vinegar.

Ingredients

750g beetroot, cooked and chopped
800g cabbage, chopped
160ml prepared horseradish, grated
White wine vinegar
400g plus 2 tablespoons sugar
½ teaspoon chili powder
1 tablespoon salt
1 teaspoon black pepper

Recipe Instructions

Make the relish.
Mix together the cabbage, beetroot, seasoning and horseradish.  Add cold vinegar to cover the mixture and put it into a 1 liter jar.  Cover with more vinegar if necessary and place in the refrigerator.

This relish will keep for 1 year if kept in the fridge.
